Hi NutriBites friends! Over the past few months, the founders of NutriBites have been preparing to pass the baton to new leadership. As your new co-directors, we would like to thank our founders Laetitia and Kaylee for their wonderful work in setting up this blog and creating such an enthusiastic team of nutrition lovers in just a few years. We are excited to continue NutriBites alongside our team of incredible writers and editors to provide “bite-sized” accurate and useful nutrition knowledge and we look forward to working together for the continued improvement and expansion of NutriBites.
Passing the lead to us, we are very thrilled to introduce ourselves as the new co-directors of NutriBites!
Here is a bit of who we are:

My name is Ashley Aguillard and I’m a PhD Candidate at the University of North Carolina – Chapel Hill. I grew up in Baton Rouge, LA but have also lived in Texas and Missouri. I graduated with a BSc in Biochemistry from the University of Missouri. Currently, my research interest is to understand the specific role of the organ brown fat in the development of type 2 diabetes and obesity. In my spare time, I love to read (any genre will do), explore new restaurants, and travel – especially if it’s to see my nephew. My goal as a scientist is to improve our scientific understanding of nutrition disorders and to communicate nutrition science to others in a digestible manner in the hopes that our society can provide new, affordable, and accessible treatments.

My name is Elisa Di Stefano and I’m a researcher specialized in food science, microbiology and nutrition. I originally come from Italy, but lived in The Netherlands, Canada and Ireland over the past 8 years. I graduated with a BSc in Food Science at the University of Turin and a MSc in Food Biotechnology at Wageningen University. During my PhD, I specialized in human digestion and intestinal absorption of plant foods and their bioactive components, at Wageningen University and University of Ottawa. I’m currently a postdoctoral fellow at APC Microbiome Ireland, working on dietary solutions to decrease iron deficiency in early life. My goal as a scientist is to tackle malnutrition through accessible nutritious foods, and to promote science-based nutritional education.
We are excited to take the lead of NutriBites and looking forward to supporting the blog in all the way we can…disseminating science proved nutritional knowledge one bite at a time! 🙂
